Black Bean and Mango Salad

Black Bean & Mango Salad

  • 1 15-ounce can of black beans
  • 1 mango, chopped
  • 1 avocado, chopped
  • 1 C fresh or frozen corn
  • 1 C tomatoes, chopped
  • 1/2 small red onion, diced
  • 2-4 cloves of garlic, minced
  • 2 TB fresh lime juice
  • 2 TB cilantro, chopped

Mix all ingredients in a large bowl, combine, salt and pepper to taste and chill.

Garnish with extra cilantro.

Don’t have time, energy or ingredients? …just add beans, mango, avocado and corn to your favorite pre-made salsa. Serve with chips, on top of quinoa or tacos!
