Blonde Chocolate Brownies
Ingredients

  • 2 1/2 cups gluten-free flour mix
  • 1/2 tsp + 1/8 tsp xanthan gum
  • 1 TB double-acting baking powder
  • 1 tsp salt
  • 3/4 C coconut oil
  • 3/4 C agave
  • 1/8 – 1/4 C Molasses
  • 2 tsp vanilla extract
  • 1 1/2 tsp Ener-G egg replacer mixed with 3 TB rice milk
  • 6 oz chopped vegan chocolate bar OR
  • 1 C vegan chocolate chips
  • Optional: 1/2 C pecans or coconut (or both)

Prep Time: 10 minutes
Cook Time: 40-5 minutes

Preparation
Preheat oven to 350 degrees F. Whisk together first 4 ingredients. In another bowl whisk together next 4 ingredients and whip until they come together and are fluffy, add egg replacer mix and then fold in dry mix. Spread evenly in a 9×9 baking pan. Add chips and bake 40-45 minutes.

Let cool for at least 10 minutes before cutting into squares. Makes 16 bars.
