Caramelized Fennel and Onion

Eat it as a side dish, atop burgers, pizza, or salads.
Also pairs well with pork, chicken, or fish!


  • 1-2 TB oil
  • 1 fennel bulb, trimmed and thinly sliced
  • 1 Lg yellow or red onion, trimmed and thinly sliced
  • salt to taste


Heat oil in pan. Cook over medium-high heat, stirring occasionally until fennel and onion begin to brown.

Turn heat down if it’s browning too fast. Reduce heat to medium-low. Stir occasionally until soft, 30 minutes or so. Salt to taste and serve.
