Fantastic GF Fall Banana Walnut Muffins

Ingredients
Combine the following ingredients in a large bowl mixing well:

  • 2 1/2 C brown rice flour
  • 1/2 C tapioca flour
  • 1/2 C date sugar
  • 2 tsp xanthan gum
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp sea salt

Add to a separate bowl and whisk together:

  • 3 C smooth pureed banana
  • 1/4 C melted virgin coconut oil
  • 2 tsp vanilla

Pour the wet ingredients into the dry and gently stir without over mixing. Fold in:

  • 1 C chopped ripe banana
  • 1 C chopped walnuts

Spoon the batter into oiled (or paper liner) muffin tins and bake at 375 degrees for approximately 20-25 minutes.
