Kale Cherry Salad

1 cup cooked quinoa (1/2 cup uncooked)
1 bunch of kale
1/4 cup pecans
1/4 cup pitted cherries cut into quarters
1/4 cup caramelized red onion

3 tablespoons olive oil
1 teaspoons Dijon mustard
2 teaspoon honey
Salt and pepper to taste

-Cook quinoa according to directions on package.
-Whisk dressing ingredients together in a small dish.
-Wash and dry kale well.
-Tear the kale from the rib into bite sized pieces.
-Add the kale to a large salad bowl and toss with hot quinoa and dressing.
-Top with pecans, cherries and onions.
