Perfect Picnic Potato Salad

A family favorite, quick and easy for bringing along on a picnic or to a BBQ potluck.

  • 1 pound red potatoes
  • 1/3 C sun dried tomatoes
  • 2 TB olive oil
  • 2 tsp dried dill
  • 2 fresh lemon juice
  • salt & pepper to taste

Cover the sun dried tomatoes with boiling water and set aside.

Cut the potatoes into 1/2 inch cubes, pop them into a large pot of water, bring to a boil, and simmer until the potatoes are tender. Drain the potatoes and place in a large serving bowl.

Drain the sun dried tomatoes, chop, and add to the potatoes.

Combine the remaining ingredients and toss over the potatoes, adding salt and pepper to taste. May be served chilled or at room temperature.
