Strawberry Preserves with Black Pepper and Balsamic Vinegar
Paired with fresh goat cheese on crostini, these preserves make a great appetizer.

Makes: 2 Cups
Prep Time: 45 minutes


  • 2 Cups Strawberries (about 1 pint, trimmed & quartered)
  • 1 ½  Cups sugar
  • 3 TB balsamic vinegar
  • 3 TB water
  • 1 tsp cracked black pepper

In a small heavy saucepan bring all ingredients to a boil, stirring.  Simmer mixture, stirring and skimming foam occasionally, for 15 to 30 minutes, or until thickened and translucent. Remove pan from heat and cool preserves completely.

Preserves keep 1 month if covered and chilled.
